 The Cashew Cookbook, published by International Relief & Development (IRD) in 2012, was recognized by Gourmand International as a finalist for its 2012 cookbook awards. The cookbook gathered the best recipes sampled during cashew festivals held in Banjul, The Gambia, and Ziguinchor, Senegal. The recipes were developed by professional chefs and amateur cooks under IRD’s Cashew Enhancement Project as a way to promote the use of cashew in traditional African dishes and more modern fare.
